We will have our first Fundraising of the Year!! Selling Valentines shirts!! Your teacher will give you more details.

Friday, February 7th National Send a Card to a Friend Day. Parents please bring in Valentine’s cards for the kids to write and exchange with their friends.

Lets Move CalendarThe "Get Moving Today Activity Calendar" developed by Head Start Body Start provides fun ways to help preschoolers be active. Check out the February Calendar. There is an activity you can do at home with your child every day of the month!

 

NUTRITION CORNER

Chocolate Zucchini Muffins

Zucchini-Muffins

Ingredients

½ cup granulated sugar
2 Tbsp. canola oil
2 tsp. vanilla extract
2 large eggs
2 cups white whole wheat flour
2½ Tbsp. cocoa powder
¼ tsp. kosher salt
1½ tsp. baking soda
2 tsp. ground cinnamon
1¼ cup unsweetened applesauce
2 medium zucchini, grated
¾ cup dark chocolate chips
1 tsp. granulated sugar (optional for topping)
½ tsp. cocoa powder (optional for topping)

Directions:

Preheat oven to 350° F. Whisk together sugar, oil, vanilla and eggs in a medium bowl. In a separate bowl, whisk together flour, cocoa powder, salt, baking soda and cinnamon; add to wet ingredients and mix until just combined. Lightly fold in applesauce, zucchini and chocolate chips. Pour mixture into cup-lined muffin pans.

If making topping, mix 1 tsp. sugar and ½ tsp. cocoa powder in a small bowl. Sprinkle on top of muffins. Bake for 15-18 minutes, until muffins cooked through. Makes 24 muffins.
